Popped into our local Asda today and they had just put out their fruit trees, they looked a good size and quality and nicely priced at £6. Several varieties of apple, pear and cherry were available :)

I'm after 3 apple trees to plant as cordons

Do they have any information on the plant tag stating what rootstock they are?

I think you would be lucky having that info on an Asda fruit tree Craig . Asda plants are generally good quality. I bought an olive tree last year , it's lovely . Only thing with Asda is they tend to get a job lot in and when they are gone they are gone. So I would get there early if you are interested.

Aldi have fruit trees in at £3.99 - provided you know (or can check whilst you are there) what pollination partners you need etc.

I'm doubtful they have rootstock info on them ... but they might.

I noticed last year the labels on Asda and Aldi fruit trees did tell you whether they needed another tree for pollination and recommended the one needed in some cases but can't remember seeing anything about root stocks :)
