Avocado Skordalia

    This is a gorgeous way to eat avocados; the combination of tart, salt, smooth, nutty and crunchy is wonderful. I either do this as a starter by itself, or prepare it with a salad.

    I guess this must be a Greek recipe. I've never seen it except in mum's old hand-written recipe book.

    Serves two:

    3 tablespoons of ground almonds
    1 clove of garlic
    1 1/2 tablespoons of olive oil
    1 teaspoon of lemon juice
    1/2 teaspoon of salt
    2 teaspoons of sunflower seeds

    Pulverize the garlic in a pestle with the salt.
    Add lemon juice and almonds and mix well.
    Add oil and mix to a smooth paste.

    Toast sunflower seeds in a hot dry frying-pan until dark brown. (Don't worry if the pan smokes a bit).

    Divide avocado into two (lengthways!) and take out the stone. Fill the holes with the almond paste. Garnish with the sunflower seeds.

    That sounds lovely and your timing is great Lidls had avacados at 20p each yesterday so I bought a lot :)

    Well, I tried this today and I must say it is absolutely DELICIOUS. A reall treasure of a recipe, and I thank you very very much for sharing it with us!

    Been away for a while - but just popped back to see if anyone had tried the recipe. So glad you like it :thumb:
