50g (2 oz) Butter 1 small Onion, diced 1 large clove Garlic, crushed 100g (4 oz) Chorizo or other spicy sausage cut into 2cm (3/4 in) pieces 100g (4 oz) Ham or Gammon cut into 2cm (3/4 in) pieces 1 tablespoon Plain Flour 175g (6 oz) Tomato Puree or Salsa 450ml (3/4 pint) hot Water 1/2 teaspoon dried Thyme 1/2 teaspoon dried Chilli seasoning Salt Black Pepper, freshly ground 350g (12 oz) peeled Prawns 100g (4 oz) long-grain Rice 3 tablespoons chopped Parsley to garnish Pre-heat oven to 150oC / 300oF / Gas 2. Heat 25g (1 oz) of the butter in a large frying pan and gently cook the onion and garlic until pale and golden. Place in a casserole dish. Brown the sausage in the frying pan. Add the ham and cook for another 2 minutes, then stir in the flour. Add the mixture in the frying pan to the casserole dish and mix in the tomato puree, hot water and seasonings. Bring to the boil and simmer for 10 minutes. Add the prawns and cook for a further 5 minutes. Cook the rice until barely tender. Stir into the prawn and ham mixture and add the remaining butter. Cover the casserole dish and place in the oven for about an hour or until the rice has absorbed almost all of the liquid. Garnish with chopped parsley just before serving. Note: I do dishes such as this in an electric frying pan ... one pot wonders.
I can vouch for this very yummy recipe. I ate it the first time at LofL's when she lived in Bucks and have made it often since then. Everyone I have served it to loved it as well. The nice thing about this recipe is that you can make it well ahead of time and then only have to rewarm it. I always serve garlic bread with it. Any leftovers freeze well.
thanks lol they both sound great .will definately have a go. does anyone know where i can buy the fine grain corn meal?i used to use it in the states all the time.great for shallow frying ,ocra, green tomatoes,cucumber,corgettes,loads of stuff that you like crunchy.
