BEETROOT CHUTNEY..!!!

    [​IMG] [​IMG] This is my recipe. Nice & easy.. [​IMG] [​IMG]

    BEETROOT CHUTNEY.
    Ingredients
    900g/2lb Raw Beetroot, Grated
    450g/1lb Onions, chopped
    675g/1 �½ lb Cooking Apples, peeled cored and sliced
    450g/1lb Seedless Raisins
    1L/40fl.oz. Malt Vinegar
    900g/2lb Granulated Sugar (I actually use a dark brown sugar)
    2�piece of fresh ginger root peeled & finely grated or minced.
    PLUS
    Jam pot covers.

    METHOD.

    1. Place all the ingredients in a large pan and bring to the boil. Reduce the heat and simmer for about 1-2 hours or until thick and pulpy.

    2. Meanwhile, prepare the jars by washing & then drying in a warm oven.

    3. Spoon the mixture into the still warm jars, up to Ã?½ ââ?¬Å? of top. Cover with a waxed disc immediately, then the cellophane disc & finally the screw top.

    4. Stoor in a cool dark place for 2-3 months before consuming.. Just right for Xmas�!!!

    Hi there....just saw this recipe and thought i must try that next year. I should be moving to my new home in a month or so which has a large(but un-cultivated)garden, in fact, a blank canvas. Hopefully I can get it up and running in time to be able to have a harvest of nice fresh veggies. Cheers....freddy.

    Looks wonderful MF. I shall ask Boss lady to make some and if she screams at me (again) I will make it myself. (Actually in our house, I do most of the cooking and Mrs S. most of the cleaning. We both prefer it like that). I am sure it will go fantastic with white stilton, cheddar, cheshire etc.

    :D Send me an invite when you have your wine & cheese then..!! ;) ;) :D It is very scrummy John & I love it with cheese as well as cold meats.. [​IMG] Haven't tried it with yorkshire pud yet though..!! :D :D

    Suggest you skip the Yorkshire pud. And do you think it's worth traveling from Gloucestershire to Yorkshire for a glass of Ã?£1.95 a bottle red wine? We do limit our guests you know. They drive, and the law is the law, and our bank manager is our bank manager. [​IMG] :D

    Will someone please tell me what wax discs are and cellophane? Will greese proof paper do? I have loads of jars-jam, cofee scew top.Will one or the other do??
    I have it on the boil Marley, though i had to use ginger from a jar and mixed fruit.
    I was talking to a guy at allotments yesterday who gave me some beetroot.Said he`d never had beetroot chutney for donkeys yrs. So...i remembered seeing your recipe and thought i`ll give it a bash.
    About 1hr and a bit to go...... :D

    Depends how long you want to keep it Elaine. MF's instructions are for the purist who want to stash this nectar away for months. Apparently it does improve with keeping. But for us lesser mortals I would tend to sterilize the jars as per instructions. Then I would spoon the still hot chutney in and put some greaseproof i.e. Silicon, paper on top of the jar hanging over the sides and screw the top onto that. Mainly because although I know what wax discs etc. are, we haven't been able to get that sort of thing round here in years. Ah well, the price of progress. (Marley, couldn't we just microwave this?) [​IMG] :D

    The house smells funny but the chutney is delicious.Thanks Marley. [​IMG] It`s tangy and sweet at the same time.I love it.
    One more question..Will it set in time? Like jelly i mean.

    It shouldn't actually set as such. When it cools, it will thicken. sorry for stealing questions about your chutney MF but all chutneys do this and I must admit that last week, Boss lady let me....no, I don't want to talk about it. [​IMG] But yes, it is delicious. ;)
