Beetroot Dip..!!

    :gnthb: This i so simple quick & goes down really well....


    Ingredients..

    2 Beetroots
    2 large cloves garlic, mashed
    A good pinch of Fresh dill, chopped (amount to your liking)
    ½ cup natural Yogurt
    1 tablespoon of mayonnaise
    Salt to taste


    Boil the beetroots without peeling. When they are soft enough rinse and peel.
    Puree the peeled beetroots. (you can grate for a coarser texture if liked.)

    Mix yogurt, mayonnaise, salt and mashed garlic until combined well.

    Then add the beetroot and chopped fresh dill.

    Put it in a bowl and serve it with crackers or chips...

    Just the kind of stuff I always have in my fridge and looking for new ways to use.
    I can see that mixture being very popular - well it will be with me.
