Beetroot,how do you like yours?

    :) Beetroot, hailed as the new superfood,cooked and soaked in vinegar..............I absolutely love it with salads,cold meats and in sandwiches.
    Apparently it is high in nitrates and reduces high blood pressure,I see the supermarkets sell beetroot juice,not sure quite how that would go down.......I suppose it would be easy to juice with a juicer,anybody have any other ideas?

    I love beetroot and bought some today in fact. But I don't like it pickled only fresh or in the shrink wrapped packs which are pre-cooked.

    Strangely enough, I was looking out a recipe for home-made ice cream for a friend here today and came across beetroot ice cream ... sounds rather interesting.

    I just love beetroot. I cook it in the pressure cooker then eat it warm with nothing on it.

    Hardly a new food, but thats the media for you. Yes I love it too and it's so easy to grow. Apart from being messy to prepare and cook its great. We have the small ones boiled whole as a veg with our dinner and I have tried pickling them in the past.

    I too dont like beetroot in vinegar, you can get that all year round and it tastes of,....vinegar, funnily enough.
    I just like them boiled in a salad with nothing on.

    Mind you it can be a bit shocking the next morning.:oops:

    :yho: Roasted roders...... !!!!!!! Roasted beetroot is mellow and delicious, and can be cooked an hour or so..!


    8-10 tennis ball-sized fresh beetroots, ideally red and yellow if you have them or just your regular red & cut into quarters
    2 tbsp olive oil
    1 tbsp fresh thyme leaves..


    1.. Pre-heat the oven to 190C/gas mark 5.


    2.. Toss the beetroot wedges with the olive oil, thyme leaves and salt and pepper, so that they are well coated. Tip them into a shallow roasting tin. Roast for about 40-45 minutes until they are charred around the edges and tender.
    3..Serve warm (not hot) or cooled to room temperature.... Yum Yum......!!!!:okies:

    After being force fed boiled beetroot cubes and mash in school lunches in the 50`s and early 60`s I HATE IT.:gnthb:

    :doh:Awww Dai that is terrible as it is a lovely veg, vinegar or no vinegar.. Garlic, herbs what ever, roasted or boild.. What a shame mate as you are missing out.. I have loved them whatever way since a child..!!! :thumb:

    Arr, but bear in mind that the country's emergency food supply for the cold war was hidden in the school meals system, then the beetroot you & I were being fed was probably not that fresh.

    Mum used to work in school meals, there was six months supply in the system, put in at one end & then fed to us baby boomers 6 months later. Tinned, frozen & dried, it was our country's food security.

    I normally compost them if they get that big.:lollol:
