    Hi all,

I planted beetroot this year as the wife said she likes fresh beetroot. It looks as though it is nearly ready, when I informed the wife of this she asked 'what do I do with it' apparently she has only had it from Tesco before. Does it need cooking or can you eat it raw?

First you wash it then you boil it until it is cooked and then you skin it and can either eat as it is as a change in vegetables or you can add vinegar to it and keep it in jars and eat with salad. I have put some of mine in Jars and the rest I have frozen then I can decide how I want it when I am ready.

Fresh cooked beetroot with a salad is great, always reminds me its summer.

The pickled stuff in jars, ........ I'd rather go without.

Just screw off the tops and boil until soft, but not too soft, as the season progresses they need a bit longer.
Pour on cold water and rub off the skins with your hands.

I do baby beets in the small slowcook crock pot overnight and let them go cold in their water. So sweet with intense flavour when peeled,

Same reason my toddler filled the Trail Mix bowl on the table with birdseed, it looks the same.

Nicest I've ever had it is cooked, sliced and then dressed with olive oil, balsamic vinegar and chopped garlic.

I am eating beetroot every day with mixed veg, just boil in salt water like potatoes, peel when cooked and eat while hot.
In fact I think you can use beetroot just about any way you want to, eat it hot, cold, pickled, roast, boiled, steamed, with dinner, with salad and it has the type of flavour you don't get fed up with like potatoes.

                fed up with like potatoes.
I could never, ever get tired of potatoes. Since childhood, they have aways been my favourite veg. Any way, any how, they always please and leave me satisfied. One of the greatest comfort foods ever for me,
                Jenny
