Beetroots

    Most of my beetroots are starting to go hard and brown on top. Is this due to the sun or have they just been in the ground too long?

    What size are they. We harvest ours at less than a tennis ball size or they do tend to get woody. The sun certainly would burn the top of the root.

    Pull some and have a boiling. You'll know if they have been overgrown as they will have a woody texture. Some of mine were hard and brown on the top but tasted just as good as the rest.

    Thanks for the replies. Some are the size of ping pong balls, some alittle bigger. I actually pulled them all up today and the brown bits can actually be scrapped off and they seem fine underneath.

    Sometimes slugs have a go at the tops of the roots which then callus over and go brown, its unsightly but doesn't really affect the eating quality, its just an idea. [​IMG]

    Does anyone know how long I leave them while I pickle them?

    Wife and I like to pickle anything we can get our hands on and beetroot should taste good after 2 months or so and last for months after that. They would make great Xmas presents this year in a small decorative jar.
