Best flapjack recipe I have found , double quantity a must

    My mum passed this recipe down to me and it's been a firm favourite thought I'd share it with you
    I have made them with both syrup and honey


    165 g butter
    125 h Brown sugar
    2tbsp honey or golden syrup
    250 g rolled oats
    Pinch salt /quarter tsp
    Pinch of ginger / quarter tsp

    Put in pan on a low heat butter ,syrup or honey, Brown sugar salt and ginger heat until well mixed but don't boil. Take off heat , Add oats .
    Put into a parchment /greaseproof paper lined square tin cook at 180 for 20 mins . Top out onto a cooling tray Mark into squares before fully cold. Can be covered with melted chocolate .

    I make a batch each baking day.

      I make flapjacks sometimesto share with the ladies at patchwork etc club but also with fellow gardeners when we go on visits. The French have nothing like them and love them. On those occasions I use a 10" square tin and adjust the quantities accordingly.

      I have graduated from the simple form to some of the variations on the BBC Good Food website. The "healthy" versions are not good. Favourites are a savoury version with cheese, chives and seeds, chocolate and orange, cinnamon and cashew and the orange and walnut which uses marmalade. Yum!
