I do buy occasionally mashed potatoes from the local cafe' that changed management recently. The previous mash tasted great, but the new one taste more like new potatoes and are more yellow and more watery. I don't really like them. Could you give me some indications regarding the best type of potato for a mash?

I thing is more about the personal taste , I like mine made with desiree potatoes and sometime I even use sweet potatoes ....

The best thing to do is try different version and find the one you like ; )

I know for sure that I don't like sugar added to mash potatoes like they do in Iceland.

Another vote for Maris Piper, along with King Edward, usually White fluffy potatoes make
    good Mashed tatties
It sounds like the café you frequent has changed to a waxy tatty

Maris piper or king Edward. Mash with pepper, butter and splash of milk. When I lived with my parents mom used to mash a raw egg in to make them extra creamy, but my wife won't let me do it in ours.
