Blueberry Muffins...... mmmmmmmm!!!!!

    Blueberry Muffins

    10 oz SR Flour
    1 tsp baking powder
    4 oz sugar
    1 egg
    9 floz milk
    3 oz butter/ margarine
    5-6 oz fresh blueberries (or any summer fruit)

    Sift together flour, baking powder and sugar
    In a separate bowl, melt butter, stir in beaten egg and milk
    Pour wet ingredients into dry and gently stir until just combined for approx 20 seconds. Batter will be lumpy, but should be. If you over-stir, muffins will become heavy.
    Spoon into Muffin cups.
    Bake in pre-heated oven (190 degrees C) for 20-25 minutes.
    This will make approx 10-12 standard muffins.

    TIP - ALWAYS make double, then you stand a chance of getting some left for the next day!!!!!!
    Home-made muffins, unlike commercially made ones do not keep longer than a day. If you want them to last, freeze them. These are fab for lunchboxes. Also, as they have a lower sugar content than normal cakes, you can eat more!!!!! ;)

    He, he!!!! Just so happens I've got 2 punnets of blueberries in the freezer for the next batch!! ;) ;)

    Well, this lot lasted 3 packed lunches, 3 tea brakes and one supper... I had to freeze them to make them last that long!!!! Yes, they were YUMMY!!!! And if you are really, really nice to me, I may even send you one from the next batch!!
    ...This week, its the Stawberry Victoria Sandwich and Chocolate Fudge Cake... mmmmmmmm....
    oh, and the Honey flapjacks, Blueberry Muffins and maybe, a couple of trays of Cornish Fairlings....

    I can do a mean brownie but choccy muffins would be a good addition to my cake abilities. :D

    Choccie Muffins??? Of course!! You don't raise kids without knowing the entire reportoire of "Healthy" choccie cakes - cheaper, tastier,and, most importantly, you can control the ingredients!!!
    Now, which recipe do you want, choccie, double choccie, triple choccie, white choccie, white choccie and cherry (much, much too nice for kiddies!! ;) ), choccie and banana...........

    My in-house advisor is making apricot muffins [​IMG] as I type, as they are my favourite along with wholemeal bran muffins.....I think tea time is nearly here mmmmmmm :D
