Broccoli and Stilton Soup

    This soup is gorgeous - even if you are not a big fan of stilton. I have experimented on people with this and even the ones who don't eat blue cheese like it.

    Hope you do too.

    Serve with thick sliced rustic bread and butter!

    Then start the diet tomorrow....!

    Broccoli and Stilton Soup

    Serves Four

    Ingredients

    1 head broccoli
    1 potato
    1 medium onion
    2 oz Stilton cheese
    3/4 pint chicken stock
    10 fl oz mixture of double cream & milk
    1 oz butter or 2 tablespoon olive oil
    Salt and pepper


    Method

    1. Peel and finely chop the onion. Peel and chop the potatoes into chunks. Roughly chop up the broccoli (use the stalk as well).
    2. Put the olive oil or butter in a pan. When heated add the onions and cook until soft but not brown.
    3. Add the potatoes and pour on the stock and simmer until the potatoes are cooked.
    4. Add the broccoli and cook until just tender.
    5. Using a blender, whiz the mixture till it is thickly pureed.
    6. Crumble up the stilton into small pieces (don't grate it!) and add it plus the milk / cream to the frying pan.
    7. Turn the heat up slightly so the mixture is simmering again (but definitely not boiling). Simmer for five minutes to allow the stilton to melt. Taste the soup and add salt and pepper to taste.
    8. Serve the soup into warm bowls with a sprig of parsley to decorate and a blob of cream or fromage frais. The soup goes well with brown buttered bread.

    Got your recipe CM very tasty indeed.

    I made Cauliflower and Red Pepper onion and potato today.

    Served with crusty bread.

    A head of cauli
    Red Pepper
    1 onion
    1 large potato

    2pts veg stock and little milk.

    Salt and pepper

    Same method as yours once veggie soft cool slightly then blend add milk when cool.

    Add fresh parsley serve with fresh crusy bread and enjoy.

    Great recipe Scotkat! I'll certainly try it soon. Much healthier than mine, without the cream!

    I think making home made soup can become addictive - you'd never go back to the tins or packets again!

    I am due to try out a sweet potato and red pepper soup and also a recipe for parsnip and parmesan soup. If they are as moreish as the broccoli and stilton I'll post them here too. I'm not vegetarian, but generally prefer veggy soups.

    Great for these cold snaps!

    Cm have made butternut squash soup with and without sweet potato.

    Courgette soup nice as well you just have to experiment with veggies at hand.

    A great soup tip I picked up was to add just one or two small sticks of celery to a vegetable based soup. I am not a great fan of raw celery flavour, but when cooked down it doesn't half give a great edge to the soup stock - a real vegetable kick!

    I also love putting grated cheese on tomato soup - as my hips will testify!
