I have seen that some of you use these two mixes.

My question is, what exactly do you use them for, and in what quantities? Especially the latter. If I understand correctly, over use can lead to plant deaths. Is that correct?

Is there anything else I should know, both for and against?

They're used as a chemical barrier against airborne diseases. You can use them against blight or peach leaf curl for example

As I understand things, using too much is harmful to plants. What exactly is too much?
