cake mix

    Hi Everyone.

    At the weekend I have the job of making a few hundred cakes to help raise money for my sons school but when making them it's usually a bit hit and miss as to how they turn out.
    I use the 125g/125g/125g/2 eggs recipy I was given and I'm never sure of the best temp to use, My ovens electric and in celcius (please excuse my spelling).

    So my queston is??

    What's the best recipy for making little cakes? the fairy/cup cake(cases in this case, lol) type

    Your recipe is the one I use. I also add 2-3 tablespoons milk to soften if necessary. I also do it in the food processor which makes life easier adding the milk at the end spoon by spoon down the funnel as needed. Makes 12 if using muffin cases and 24 if using the wee cases. I bake 180.C but my oven is fan forced so if your oven is not fan 200.C A little tip for flat tops is swirl the top of the mixture with a skewer spreading it more to the edges of the case.

    I forgot about the milk, it's been a long time since I made any :)

    I just have an electric wisk but it does the same job. Will have my oven on 200 and alot of chocolate chips to hand.
