Cardoons

    Hello all,

    I've got some cardoons growing and, having just looked into them a bit, it sounds like they are quite bitter and not that nice to eat. Has anyone tried them? Am I looking at radicchio bitter or worse?

    Hi Liz, they are actually like celery & quite pleasant to eat.... You must pare off all the strings so you are left with the creamy white flesh inside, then braise or treat like celery...... They are magnificent to look at if not quite so to eat.. :wink::hehe: but the Victorians loved them as a vegetable.. :D
