carrot cake recipe needed

    Mary Berrys,"American" Carrot Cake the healthy option....
    10 ounces of,grated carrots,sunflower oil
    caster sugar,and SR flour,4 eggs,3 ozs mixed chopped nuts,3tsps cinnamon,3tsps ground ginger.
    2 tsps baking powder:put dry ingredients including carrots together in a large bowl,beat the eggs and oil together tip on to the dry ingredients, mix altogether you should have a good batter bake at 180 for 50-60 mins this is a tray bake, bake it in a roasting tin, it is the best ever. It freezes well. [​IMG]

    Recipe as promised ...

    250g plain flour 2 tsp baking powder 1 tsp bicarbonate of soda 1/2 tsp salt 1 tsp ground cinnamon 225g carrots (grated) 110g chopped walnuts 220g soft brownsugar 3 eggs zest of 1 orange 100g butter (melted) Oven temp 180oC Mix flour, baking powder, bicarbonate of soda, salt and cinnamon. In s separate bowl combine carrots, walnuts and sugar. Beat eggs into the carrot mix, one at a time. Add zest and butter. Add spoonfuls of seasoned flour until all is well combined. Pour into greased tin and bake for 1 1/4 - 1 1/2 hours.

    For a butter cream icing, cream 50g unsalted butter, blend in 125g cream cheese and 225g iciing sugar.

    I have a Texan recipe also but it calls for 1 1/2 cups sunflower oil instead of the butter in the cake but personally I find that too much.
