Chicken Piri-Piri

    Rosa has asked me to post this.

    This area is famous for it's grilled chicken, called Frango Piri-Piri. It is best done on a charcoal grill but can be done in the oven.

    To make the Piri-Piri Sauce ...

    Using an airtight jar, fill one third with dried chillies then fill to the top with olive oil. Close tightly and leave for a month before using, turning occasionally.

    Alternatively you can use Tabasco or any hot sauce you like.

    Lemon Juice
    Salt
    Piri-Piri Oil
    Olive Oil (half of the quantity of Piri-Piri used)
    Crushed Garlic (to taste)

    Using whatever cuts of chicken you prefer (legs, wings, breasts or thighs) sprinkle with salt and lemon juice and leave to sit for one hour.

    Combine the Piri-Piri Oil, Olive Oil and Crushed Garlic and baste the chicken pieces. Cook on the grill or in the oven until done and crispy, turning as required.

    This looks really nice.
    what do you recommend serving with.chips,rice,pasta?

    i have to cook every saturday for my fiance,so im on the look out for ideas.

    also,is there an alternative for piri-piri oil.
    not sure what its called in german,or if i can get it.

    also, to have a spicy oil, simply add to your olive oil bottle as much chilly as you like,and maybe also some garlic, spices etc. and use it immediately, as well as after a few months.
    Everything will be well preserved in olive oil and releasing the taste.

    jjdecay - I have seen Piri-piri here but can't remember where. Look in a large supermarket in the foreign food department. Or substitute Tabasco.

    Sorry, just noticed that you had already mentioned using Tabasco as a substitute Sis.
