CHILLI GARLIC SAUCE so near yet so far away

    Hi, Anyone a recipe or clues

    Now you go to a Turkish Kebab shop and ask for chillie sauce, It is all more or less the same,, Tomato sauce, vinegar, and some sort of greenery floating in it and looks like watered down tomato sauce

    I found a "different" Kebab shop
    His sauce home made was to die for
    Very fiery Garlic, tomatoes and chilli, and orange in colour and seemed to contain all the tomato seeds etc

    Over years we became Pally, his wife worked in the local hospital as a Physio

    I asked him for the recipe, no problem, it is this this and this but I will write it down ready for your next visit

    Unfortunately, my employer next day changed my field service cover and I never got a chance to go back for 12 weeks
    Went strait to ALI's and it was closed shutters GORN I tell ye GORN
    I even went to the hospital but Physio Ali's MRS was not enough to go on

    Anyone got a recipe for Garlic chilli sauce that is NOT SICKLY SWEET very Garlicky PLEASE

      Cheers Dim I will give it a go at the weekend :-)

      If no one hears from me for a week or so I am probably sat on a pan, with toilet rolls out of the fridge

        Enthoven just spent 250k on the metal work alone for the Rose arches in his veggie garden. I'll take you a photo if it makes you feel at home :thumbsup:

        Not sure how the home grown garlic and chili sauce is doing :heehee:

        Must admit that I wouldn't describe Nandos Piri-Piri (even the extra hot) as being hot.......

        This is a guess, but I would start with a tin of Waitrose cherry toms in natural juice, garlic, white wine vinegar (just a splash), a pinch of both salt and sugar, maybe a wee bit of cummin powder, and chillies. The big question is which chillies? Scotch bonnets or naga both have great flavour and heat. Chipottle chillies can have great heat and have a smoky flavour. Gently simmer for an hour or so and then blitz with a blender.
        Just an idea, as I never tasted the sauce.

          It was more Garlic than hot hot SO I will try with the piri piri with additions from DIM this weekend

            Think I have done myself an injury

            One tomato, one garlic clove one teaspoon Garlic Piri Piri, one teaspoon of Carribean hot chillie sauce, one teaspoon of Mint sauce, Four teaspoons of vinegar
            Went down in one like a bloody mary but without the alcohol

            On my second pint of full cream milk

              That hot Caribbean sauce is soo good on cheese on toast!
