Chilli sauce

    Hi All!
    Anyone got any 'recipes' for a nice hot chilli sauce please? I guess I may have to wait a bit for any possible answers but all and any input would be appreciated!

    Hi Roy. I don't have a particular one off the top of my head but I'll have a look through my "Hot Stuff" book later. In the meantime, I'll put a Mexican salsa recipe up which is great as a dip or to go on meats. We are great fans of Mexican food! Mmmmm! [​IMG]

    Love salsa so will just pop to your recipe and print that off. Waiting with anticipation for your chilli sauce recipe!

    Piri piri oil is widely used here for virtually everything. Use it in place of olive oil to put on pasta or to baste meats.

    Fill about a third of a small glass bottle with crushed chillies ... piri piri is used here but you can used whatever hot chillies you have, even dried ones. Fill the bottle with olive oil, tightly cap the bottle and let it sit for at least a month, turning occasionally to mix. You can keep topping the oil up as you use it as it gets very potent! :eek:

    And one for fish from Brazil ...

    Molho de Pimenta e Limao

    1 teaspoon salt
    3-4 large malagueta peppers, minced*
    1 small onion, minced
    1 clove of garlic, minced
    Juice of 3 lemons

    Place the salt, chillies, onion and garlic into a small earthenware bowl and mix until you have a paste. Gradually add the lemon juice blending thoroughly.

    This can also be served with grilled or roast meats.

    * use whatever hot chillies you can get

    Dalbuie, just looked up your recipe and it looked so familiar. It's like the Sweet Hot Chilli Sauce from the Hot & Spicy Cookbook by Charmaine Solomon. Do you have it? There are some fantastic recipes in there. [​IMG]

    Hi Lady of Leisure,I think I got it from my friend, who is a real spicey food fan, she has a web site she is called the chilli queen [​IMG] I don't have the book you mentioned but I have a great book called The chile pepper encyclopedia by Dave DeWit, it has some great recipes and eveything you needed to know about chill's. :D

    My t'other half could be the chilli king, Dalbuie .. nothing, bar nothing is too hot for him. He uses fiery sauces on everything from eggs to pasta to meats. I'm not such a fan of hot things and they are not a fan of mine either making me suffer! :eek: I have many hot books, however. A good one is Hot Stuff by Jessica B Harris ("a cookbook in praise of the piquant") which has hot recipes from all over the world, Alex Patou's Cajun Home Cooking (he has a restaurant in New Orleans ... whoops, that may be "had" :eek: ), the one mentioned above (which is mostly Asian) plus various Mexican and Portuguese ones. Variety is the spice of life!

    Hi L of L, many thanks for the Piri Piri oil info. Its nice and simple and I like nice and simple!
    I will also give the Molho de Pimenta e Limao
    recipe a go although may not manage the meat part as I am veggie.
    This will have to wait until after the salsa!

    Hi Dablbuie, apologies that I did not see your recipe for chilli sauce. Rest-assured I will check it out now! Can you give the web address of your friend's website The Chilli Queen please?

    Hi L of L and Dabuie,
    thanks for the website details Dalbuie. Turns out that getting fresh chillies from any website right now is just not going to happen as they have recently gone out of season. However, I'm having problems getting crushed chillies too. I see your friend does Habanero crushed. Is her farm based in Netherlands?

    I really wanted to get on with your recipes L of L and Dalbuie but it may have to wait, unless I use one of my chilli sauces instead of pure chilli. Not quite the same though, is it... [​IMG]

    Roy, McCormick or Schwartz does crushed chillis in jars or boxes from any grocery store.
