Coffee and grilled walnut cheesecake

    A 7 inch loose bottomed flan tin. Upside down , cover with foil .
    Then turn right way up and line the case.

    Ingredients ( base)

    4 oz finely chopped ** grilled walnuts. ** Watch carefully as they burn easily !
    8 digestives biscuits put in a paper bag and crush with a rolling pin until fine.
    3 oz melted butter.

    Method
    Mix butter biscuits and 2oz walnuts together and line flan base firmly. Chill well.

    Ingredients(Cheesecake)

    1) 2 tubs of Philadelphia cream cheese ( or supermarket cheaper version)
    2)130 ml double cream
    3) 50 gram icing sugar
    4) 2 teaspoons coffee dissolved in 2 teaspoons of hot water.
    5) 1 teaspoon vanilla essence

    Method
    Gently combine 1+2+3 together then add 4+5.
    Spread over biscuit base.Decorate with final 2oz chopped walnuts.
    Chill well .

          Now I would have called grilled walnuts toasted walnuts.:biggrin:

            I think they are - perversely - toasted when done in a pan on the stove @pete. That's the way I'd do them anyway to have more control.
