Composting at a holiday home...

    hello all, I'm looking for some advice.

    My parents own a holiday home in the south of France. Various family members use it, and it's probably occupied for 6 months of the year - for three months over the summer plus random weeks in October, February and at Easter. Because of recent changes to the local waste disposal policy they are keen to reduce the volume of waste being produced. Over summer especially a lot of veg / salad / fruit waste is produced, and we want to find alternatives to just binning it.

    Is there any composting system that works when it is used intensively for a while, then is left for 2-3 months at a time? Other things to bear in mind is that it gets very very hot in the summer and there there isn't much need for finished compost atm: the garden is mostly rock / gravel and very little soil.
