courgettes

    hey there peps, any one with a good idear what to do with courgettes, must be a child friendly and a vegetable hatter friendly reciepe. i was thinking cream and black pepper i dont know ????

    recipy 1)
    egg noodles served with a sauce made of: sliced carrots, mushrooms and courgettes gently fried with some chives. Add mascarpone cheese at the last minute

    recipy 2)
    slice some onion, roast it with oil, chopped bacon, garlic slighly crushed (maybe no garlic for children...).
    Add sripes of courgettes and tomatoes.


    recipy 3)
    cut courgettes in half, empty them.
    mix minced meat with parmesan cheese, eggs and spices, some bread previously soaked in milk and "squeezed"(?), salt.
    fill the courgettes with this mix and roast them gently in olive oil.
    Cook in a pot covered with tomato sauce diluted in water (although also in the oven I think it would be fine)

    Have you tried ratatouille, it is a French vegetable stew.? Fry some onion and garlic in some olive oil fry for 10 mins then add red or green peppers(chopped). Next add sliced courgettes and 1 aubergine sliced,season add some basil and simmer . Delicousfor 30 mins then add some chopped tomatoes and cook for another 15mins [​IMG]

    Lightly fry in a beer batter. The kids might find the crunchy covering enticing.

    To go back to anthea's recipe for ratatouille. When I make it I usually make up a double portion as it freezes very well. I also prefer to eat it cold as a salad.
