When I make bolognese and such like, I make far too much on purpose, and bulk the mince out with courgettes and any other chunky veg I have kicking about. Then after keeping out enough for tea, the rest gets boxed up and frozen.

Don't know about freezing courgettes solo though.

Cut 3/4" thick and fry in butter until just coloured. Pat dry on kitchen paper then freeze flat.

    Cheers, Tony.

The green/black ones don't freeze particularly successfully, but have found them acceptable when used in the likes of fish pies/veggie lasagnas/casseroles.

Yellow courgettes are crisper than green/black ones and we've found those still retaining something of their crispness after freezing/defrosting when used in stir fries/other stuff (drain first).

Thats a shame Jiffy. I think Marley gave me the recipe & it turns them into a different animal. But no good if it upsets you:sad:

I grate surplus courgettes then place into a colander and sprinkle with salt (1 teaspoon to the pound) to help draw moisture out, then I rinse, squeeze, bag and freeze them. When defrosted I drain excess water down the sink and use the courgettes in stir fries, soups stews, pasta sauces, fritters etc etc.

I've tried as Tony mentions above with little success, maybe I should try that one again.

    Steve...:)
