I want to make a large batch of cup cakes like these with my own crystallised flowers on them.. [IMG]

[IMG] [IMG] Crystallised Flowers can be prepared in advance and stored in airtight jars. Gently warm 75ml of natural essence of rose water and gradually sprinkle into it 15gms of edible Gum Arabic powder (obtainable from specialist cake decorating shops), stirring continuously or the gum will coagulate into a sticky lump. When the gum has dissolved and the liquid is cool, dip into it whole dry primroses or violets (use tweezers) now & there are Roses Borage & Rose petals in the summer. Shake off excess gum, coat with caster sugar and place on baking parchment on a cake rack to dry.[IMG]

    Hey Marley,

    Don't use peonies, mildly narcotic.

As far as I know there are no poisonous Rosacea, so thats apples, pears, strawberries, cinquefoil, silverweed etc.

Can't think of a toxic cruciferae, so radish, rocket et all are in.

mint & carrot family are too small, and you wouldn't want crystalised hemlock anyway.

Just checked, sloes & damsons are rosacea too, plenty of those about at the moment.

In the past I've brushed on whisked egg white and then either dipped or sprinkled on castor sugar. Leave them to set hard in a warm dry place.

    I have used primroses. :)
