I had a good crop of cucumbers this year with Pepinex F1 cucumbers. The only upset I have is that the cucumbers don't keep that well once cut they go soft after around a week. Is this normal or can anyone recommend a variety that keeps better over longer periods?

I think a week is pretty good, presumably in the fridge.
I used to give lots away when I grew them, for that reason and the fact the more you pick the more you get.

You might try doing what supermarkets do, pick them early, treat with fungicide and wrap in cling film,
    but why would you?

By growing F1 varieties you make an 'all or nothing' crop more likely, its the reason behind the breeding.

Consider pickling or fermenting excess crop.

Cucumber soup is very good, especially with some cumin added.

I wrap mine in clingfilm then store in a fridge. The taste remains as good and they last a couple of weeks.

Wrapping a cucumber in plastic does extend their shelf-life by 60% which is why supermarkets do it.
Despite the use of single-use plastic it still makes economical/environmental sense to wrap them rather than let them rot.
