Do courgettes freeze well please?

    According to my very old 'Will It Freeze?' book, the answer is yes. Choose small, young ones; wash and dry them, cut into 1 cm thick slices, blanch for a about 1 minute and open freeze in a single layer. The recommended 'keeping time' is 3 months - common sense will prevail here though. Alternatively, it suggests, you can sauté them in butter and then freeze them.

    Not a veggie I grow, but my Dad used to and Mum froze 'em. Going on what they did, you really do need the small ones - Mum froze some older ones and I'd describe them as decidedly 'slimy' when cooked. Of course, this comes with the caveat that my Mother went to the 'if you can still recognise it's shape, it's not done' school of cookery. :hehe:

    i always make up a batch of provencale veggies (in tomato and onion sauce) and find this freezes well.

    can be used as a veggie side dish or as a small meal baked with cheese on the top! if you want a recipe i can post it

    ok

    fry onions til soft, garlic too if you like it

    then add capsicum fry a bit longer (more saute than fry really) then add courgette, sliced and carry on a little longer


    you can add other veggies too


    add a can or two of tomatoes (or fresh if you have)


    simmer for 10 - 15 mins


    job done


    i like to add fresh herbs but dont do this until re-heating to serve

    when cold batch up in plastic bags


    tis delicious - goes well with a roast lamb dinner

    or put into baking dish and top with cheese - bake 20 mins till golden on top serve with a chunk of bread - good peasant food

    ps i freeze this and take it camping - you can also add beans - kidney or canaletti which adds protein and is a nice veggie meal - or you can spice it up with some chilli - add this at the onion stage
