Edible dianthus?

    Hi, I'm new to the forum, Been gardening for about 4 years so am still a bit green behind the ears. Can anybody tell me if all varieties of dianthus are edible. I have some in my garden but can't remember what variety they are. I wanted to use the petals to flavour some ice cream. Any advice?

    The flowers on all Dianthus are edible, but generally the ones used for eating are the single, aromatic ones.
