I have about 20 epiphyllums in the creche at the moment, and the ones I planted earlier are at rhe toddler stage, especially the largest one here which is developing its second and third leaves.

My question is, they seem to be growing on a short stem. Will this disappear, and how?

It will not be noticeable after a while Rich, although that stem will remain and grow thicker. I think plants grown from seed will always have that different appearance at ground level as opposed to plants from cuttings.
The leaf shape will also change to the usual flatterned type after a year or two.
One tip, make sure you keep some of the slower ones, they quite often turn out to be the best colours, and the more compact plants.
