eyes of texas salad recipe

11/2 cups black eyed-peas, cooked and drained
1 cup of roce, cooked
1 cup of chicken, finely chopped
1/4 cup celery, chopped
1/4 cup onion, chopped
1/4 cup mayonnaise
1/2 teaspoon salt
1 teaspoon pepper
dash hot sauce

combine cooled black-eyed peas, rice and chicken.
add remaining ingredients, blend well and pack into an oiled 5 1/2- cup mold. refigerate until set. unmold and spread with avocado topping.

Avacado Topping

1 avacado, mashed
1/2 cup of sour cream
1 teaspoon garlic salt
1/2 cup mayonnaise
1/2 teaspoon worcestershire sauce :rolleyes:
1/4 teaspoon salt
1/2 teaspoon lemon juice

blend ingredients together until smooth.
spread over black-eyed pea ring as though frosting a cake.
