Fancy's Mum's Lime Pickle.

    Cut your green or yellow limes into 4 quarters(not lemons)
    Rub in plenty of salt on the fleshy part and leave in the sun to dry all summer. turn them over every 2-3 days. when limes are well dried and looking very brown in colour put them in clean jars.
    pour vinegar untill it covers the limes in the jar.
    keep in air tight jars for 6 months.once a month turn the jar upside down and vice versa.
    It is a delicacy in the tropics.
    you could add dried pepper corns and dried chillies into the limes. and leave to mature.

    But this is the Sri Lankan recipe, FANCY, and they have more sun than me! :D :D Besides, I won't hve limes on my tree till after the summer!

    I had been looking forward to making this relish but there is no way I could get the limes dried during the summer. I shall try working limes into one of my relish recipes. I know it won't be the same as your Mom's FANCY but the idea of lime relish has quite caught my fancy - excuse the pun.
