Cauliflower cheese with a difference (feeds two)

    4 medium potatoes
    1 small cauliflower
6 slices of dry cured streaky bacon
    1 packet mature cheddah
    1 tablespoon flour
    1 pint of milk
    1 oz butter
    salt and peper

    1. Peel potatoes and cut into reasonable sized pieces. Cook
    2. Remove leaves and quarter the cauliflower. Cook. (I steam the cauliflower over the potatoes)
    3. Grate all of chees and stick it in a saucepan, add flour and then milk. Stir til flour is dissolved. Add butter a little salt and some pepper. (this works as well as a Roux)Put on one side
    4. Place the potatoes on the base of a pyrex dish or similar. Cover with a layer of streaky bacon, cut into pieces. Place cauliflower on top.
    5. Heat cheese sauce to boiling, stirring all the time and then pour over the top of cauliflower, ensuring everything is covered.
    6. Place in oven Gas Mark 4 or the equivelent until the top is brown. Serve.
