    Tidying up the back room, I've found a whole pumpkin that I bought as an emergency backup just before halloween, in case anything went wrong with my effort to make a pumpkin lantern for my son.

    Will it still be ok? Its still firm.

    What can I do with it? I've never prepared a pumkin before. I have no idea what to do with it. I presume we turn it into some sort of meal.

    It would make a nice soup Clue:dbgrtmb:...
    I just cut it in half,scoop out the seeds,cut off the skin,dice the flesh and fry off in a bit of Garlic oil and butter for 5 mins then add some curry powder chopped garlic,chilli's and chopped leeks or onion ,cook them off for another five mins add about 1 pint or so of veg stock and leave to bubble till the pumpkin has softened,you can add a bit of turmeric to enhance the colour if you want...then blend it till smooth...add a splash of cream and eat with a dirty great lump of herby bread:dbgrtmb:

      Our front floor is covered in pumpkins. Indeed they last till spring, but as we eat away we'll gradually get more space ...
      After years of this I've built up quite a recipe collection.
      Look at http://whatscookingamerica.net/squash.htm.
      Or see my Christmas recipes for December this year (site below): stuffed pumpkin/squash in all its glory! Or December 2010, same site, for simpler fare.
      Good luck - love from Annemieke.

        My pumpkin soup is;

        Diced pumpkin
        Chopped onion
        Ground black pepper
        Veg stock

        Just boil until the pumpkin is soft and then blend.

        Back in the pan and add a handful of chopped coriander, some fennel, black cummin and onion seeds. Simmer for 20 mins, then add some spinach, simmer for five minutes more and serve. Add a spoonful of cream to the soup in the bowl if desired. Also, it's rather nice with a wee bit of crumbly Wensleydale or Cheshire! Good buttered bread of your choice on the side.
