freezing veg

    Can u freeze Courgettes,if so do they have 2 b prepared, ;)

    my 'freeze it' book says "....freezes well.choose young, unblemished small courgettes; large ones don't freeze sucessfully as they contain too much water.
    wash & cut into 1cm slices, discarding both ends. blanch for 1 minute,cool,drain and open freeze on trays until firm, then pack into polythene bags. alternatively they can be sauteed in butter instead of blaching and packed into rigid containers when cool, leaving a 2.5cm headspace.

    freezer life= 1 year

    thawing: cook blancehd courgettes from frozen. finish cooking sauteed courgettes until golden brown and tender"

    Sorry to jump in here, but does anyone know the freezer life for onions?

    book says chopped, 3 months, whole baby onions, 6 months
