So, I have frozen some mint leaves in a jar, and they are currently in the freezer. What is the next step if I want to use them in cooking or crush them to use in a sauce? Thanks.

I am not sure how you would use them now as they will go limp and soggy when you defrost them, :D I usually chop them when fresh and freeze in ice cube trays then i can get 1 or 2 out as needed :gnthb:

Yes, you need to use it in its frozen state or it goes all slimy. The ice cube tray tick is a good one but when you buy frozen herbs, they come in a pack where you just shake out how much you want. Not sure what their secret is?

i agree best to smash leaves up whilst still frozen, strip them off the stalk and bash or chope em up. I freeze parsley this way and it works very well too

Or.. Chop up fresh then spread out on a plate or board so that it is all loose bits & freeze... Open freezing..
Then very quickly transfer to bag or container & shake before use it stays fairly seperate.. Ideal for the "pinch" or whatever.. O therwise I chop & freeze in cubes for sauces.. :thmb:
