While making plum jam last week I decided to add some ground ginger to it - and was it ever good! I made up another 5 lb. batch over the weekend and put a bit more ginger in it, this time almost a tablespoon full. And instead of putting a teaspoon of lemon juice in it, this time I used lime juice. The ginger really gave it a zing.

Hi people: ginger in plum jam - sounds delicious. Do you just use the standard plum jam recipe 1lb of fruit to 1lb sugar?
And please - what does avatar mean?
    Thank you

Evening, flowerpotjane! An avatar is the picture you see under people's names.

I can't answer the question about the jam, however, it may be in the Recipe section! [IMG]

Hi flowerpotjane - I always use the 3:1 sugar. Just last week I asked via e two producers of the special sugar if it was to be had in either England or Portugal. Both said no but one sent me an address. I'll send it to you this afternoon, must look it up at home, I'm over at my son's house at the mo.

Do you know this special sugar?
