Gooseberry Mint Jelly..!!

    Gooseberry Mint Jelly recipe



    Serve with hot or cold lamb. Note: This is not a clear jelly.

    ingredients

    1 kg (2 lb) green gooseberries warmed
    sugar
    12 large mint sprigs





    method

    1. There is no need to top and tail the gooseberries.

    2. Put them in a preserving pan with water to cover and simmer until pulpy.

    3. Strain through a jelly bag, then measure the liquid: to each 600 ml (1 pint) add 450 g (l lb) sugar.

    4. Stir to dissolve the sugar, then add the mint, tied in a bundle, and boil until setting point is reached.

    5. Remove the mint and pot as usual.

    makes about 450 g (l lb)

    Oh, that does sound yummy. Pity we don't have our gooseberry bush any more.

    However, I guess I could use mint with other fruits too. Perhaps an apple and mint jelly?

    I don't think I have ever seen frozen gooseberries, but I shall look.

    The Apple Mint Jelly sounds good too, Marley. But I don't know why there is vinegar in it. :confused:

    :thumb: The vinegar is there to act as preservative I think Kedi..... Also maybe to make the flavour more traditional perhaps as it is an accompaniment to Lamb etc....:confused: Don't know for sure Kedi, but it has always had vinegar in as far as I know....:D:D

    The sugar is the preservative - perhaps double is better :confused: But I think I shall leave it out. :D

    Yes, I would think that it would go nicely with lamb.
