Green Tomato Cake.....

    :SUNsmile: I have been sent this "Diana Rattray" recipe to try out.. I thought I might try & do it tomorrow or Friday depending on my time.. It sounds Yummy with a cream cheese like we do for carrot cake..

    • 2 1/4 cups sugar
    • 1 cup vegetable oil or melted butter
    • 3 eggs
    • 2 teaspoons vanilla
    • 3 cups flour
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1 cup pecans or walnuts
    • 1 cup raisins
    • 2 1/2 cups diced green tomatoes
    • coconut (optional)
    Preparation:
    Preheat oven to 350°. 180c. Gas 4..
    In mixing bowl, beat sugar, vegetable oil or butter, eggs and vanilla until smooth and creamy. Sift together the flour, salt, baking powder, cinnamon and nutmeg; slowly beat into egg mixture. Blend well. Stir in pecans, raisins and tomatoes.
    Pour into greased 9x13-inch tin. Top with coconut if desired. Bake for one hour, or until a wooden pick or cake tester inserted in center comes out clean. .
    Serves 12.

      how interesting! i never would have thought to put tomato's in a cake! this'll be one to try :thumbsup:

              Interesting, sounds as if should be fairly moist - keep us posted. Might give it a try I've got more green tomatoes than I had red!

                Good idea. Can't be any worse than courgette cake (last resort of the desperate). That was a bit damp and soggy when I tried it and it only uses a little bit of courgette up anyway. My toms are still gamely ripening but I'm sure I'll end up with a pile of green ones so this recipe could be handy.
