Have you ever had to resort to freezing herbs due to excess or excessive heat? I've found that if you freeze portions in an ice cube tray, you can save a lot of them!

:blue thumb: Ooh yes Astro I freeze plenty for the coming winter months.. If you tie bunches of Thyme & pop them in bags in the freezer you can rub the leaves off while still frozen.. You can then freeze loose leaves in the bags & take out pinches of whole leaves for cooking or in cubes. i also freeze sage leaves whole.. Lay them separately on sheets & open freeze. Bag after 24hrs use as & when..

Perusing the forums for this type info. I have an over abundance of oregano and Basil and needed to start researching how to save for later months. Is freezing preferable to drying them? (Not sure how to do that either tho!)
