Horseradish Sauce...!!!!!!

    [​IMG] This is the recipe we use. Just be careful when grating the root. A little shall we say... Strong..... :eek:
    300ml (�½ pint) Double Cream
    225g (8oz) Horseradish
    225g (8oz) White Breadcrumbs
    25g (1oz) Caster Sugar
    2 tsp Mustard
    1 tbsp Vinegar
    Salt

    Soak the breadcrumbs in milk for a few minutes to soften.
    Grate the peeled horseradish root.
    Squeeze the breadcrumbs to remove excess milk and combine well with the horseradish.
    Add the sugar, mustard, vinegar and slat to taste.
    Lightly whip the cream and fold in to the mixture.
    Serve very cold.


    You can grate & store the root in vinegar as well for use later.... ;) [​IMG]

    I bought a packet of horseradish powder from a health food store but there were no directions or guidelines on using it. Any idea how much I should use ... a teaspoon?

    Frances B - Caster sugar is ordinary sugar, just a tad finer than granulated. I'm sure you can get it in Italy, it is most likey called something else... but it is NOT icing sugar(confectioners sugar)

    [​IMG] Frances you can use ordinary white sugar, it doesn't have to be caster sugar. May take a little longer to dissolve that's all.... Enjoy... [​IMG]

    Thanks, anyway, Marley Farley. I only bought the powder because I couldn't find the root. I came across it by accident when I was buying caraway seed ... we make our own bread and ALWAYS put caraway seed in it, regardless of the type!

    Portgual ... and they don't even sell it as a vegetable here!

    My sister in Germany has told me it is invasive and it took them a couple of years to get rid of it when they decided it had taken up too much space. True?

    I'm bringing this back from when I first joined GC ... does anyone new here know how to use horseradish powder? Mix with milk, water, vinegar, add other ingredients?

    Lol. I phoned a friend who is a chef, for you. He suggests mixing the other ingredients to the desired consistency and then slowly add horse radish powder to taste. [​IMG] :D If you make it again you will then know how much to add.

    Marley has given you a recipe which looks pretty good. Use that one. But instead of grated fresh horseradish use the powder. I would put a drop of vinegar on it for an hour before adding it to reconstitute it (white wine or sherry vinegar? Either!). Apparently it's only dried horse radish. Then add some to the mix and taste it. If you can't taste it then add a cautious load more, if you can taste it but it's not quite enough then add a cautious little more. If it blows your head off then make some more mix. [​IMG] :D

    Sorry I can't be more help but this is Gardeners' Corner not (thank goodness) Chef's Corner but you would think someone would know something about what we grow. Heck I even grow horse radish. [​IMG] (But not powdered). (Sorry the graemlin is not meant to be rude. I didn't realise it stuck its tongue out. The expression just looked right.)

    Again, thank you John. We like it hot, so when we have finished the Tesco Hot Horseradish (we use a lot with meats and cheeses), I'll make some up. Hmmmm, they don't do double cream here so will have to work on that one, too! [​IMG]

    P.S. Horseradish with smoked fish or with veg. Deep fried in batter is superb. I use them for a starter when I entertain vegetarian friends.
