How do I do this?

Type a word that is crossed out, i.e. has a line through it?

Type your word/phrase then highlight it and go to Insert and Strike-through.

 

I don't think it is easy to find, "insert" is here, in case you were not aware of its presence

 

Or just type (without the *'s) [*s] before the text you wish to strike through and [*/s] at the end of it which I find much quicker than stopping typing and fiddling with the touchpad and toolbar icons.
