Kandy has asked me to put together my Peanut Butter recipe. My husband likes it - especially on home made white bread toast. No ! do not devote the morning to preparing the dough mix. I "cheat". Quite happy to admit to that. I wouldn't be without my Panasonic SD-254 break making machine. I can control all the ingredients and thus know what comes out at the end. Haven't bought shop bread for 5 years now and take it as a gift to friends and relatives when visiting. But that's another story... All you need for peanut butter is peanuts (blanched) ,salt and ground nut oil. I got a 1kg bag from our High street health food shop "reduced" price/near sell by date.I spread them out on a flat roasting pan and drizzled oil over to coat. Roast on middle shelf Gas mark 6 / 200c turning from time to time until they are beige to golden brownRemove from oven and cool. I have a little Moulinex coffee bean grinder and I grind small amounts either to medium fine with some crunchy bits - or totally fine to give a smooth finish.Empty all the ground nuts into a bowl as you work. Then, stir in salt to taste. I cannot bear it without salt but it's up to you. It's your Peanut Butter.Then, gradually stir in the groundnut (peanut oil) until it is spreadable. it will take quite a lot of oil but do it bit by bit.Pot up in jars. It will keep for months in a cool dark place and it is so much better than anything in the shops.
