    Is this a Butternut squash??
I have just been given it and wondered what's the best way to eat it!
Can't find a recipe here except the spicy one and I don't fancy that.

Roasted as one would potatoes or parsnips or shallots or sweet potatoes, heavenly, though Buttercup is nicer.

They are horridble to peel i know my daughter used to buy lots of them but was put off by the peeling bit..you cant seem to get a grip on them properly..so its best to cut it in small slices upwards and peel that way..I dont know if you add thickening to your soup butyou wont need it as it makes the soup quite thick..

No,I just whack in loads of veg and Pearl barley and a couple of stock cubes..then add enough water to make sure I have enough for a few days supply...I pulse it in the blender and it seems to thicken it up.

Its really healthy as a vegetable this is what is in it..
    NUTRITION
Butternut squash is a well-balanced food source that is rich in complex carbohydrates and low in saturated fat and sodium. It is a very good source of vitamins A and C and a good source of beta-carotene, magnesium, manganese, calcium and potassium
