    Recipe for anchovies in green sauce:

    Clean the anchovies by removing only the interiors. Dip them quickly under cold water and blanch them in boiling water with a bay leaf and a pinch of oregano for no longer than 2 minutes.
    Drain and cool them.
    Meanwhile prepare the sauce. Mince the parsley with the garlic, capers and anchovies.
    Dilute the mixture with the lemon juice and olive oil.
    Now remove the head and the backbone to the anchovies .
    Place fillets in a deep serving dish.
    Spread the sauce over the anchovies. Keep cool until ready to serve.
    PS capers are tiny round green fruits preserved under vinegar that you find at the supermarket near the tinned olives, mustards etc...
