Irish Soda Bread..!

    IRISH SODA BREAD

    12 ozs Wholemeal Flour
    4 ozs Plain White Flour
    1 teaspoon Salt
    1 teaspoon Bicarbonate of Soda (Bread Soda)
    1/2 pint Buttermilk,
    or 1/4 pint of soured cream mixed with 1/4 pint of water,
    or 1/2 pint of sour milk

    Sift white flour, salt and bread soda, and mix thoroughly with wholemeal flour. Make a well in the centre and add most of the buttermilk. Working from the centre, mix with your hand adding more milk if necessary. The dough should be soft but not sticky. Turn out onto a floured board and knead lightly, just enough to shape into a round. Put onto a floured baking sheet and cut a deep cross over the top of the bread.

    If you don't like a very crisp crust, wrap the bread in a damp tea-towel whilst it cools, so the steam it gives off softens the crust a little.

    Bake on the top shelf of a pre-heated oven, at 220C / 450F for 30 / 40 minutes.



    I:thumb: I use sour cream & water or soured milk..



    How To Sour Milk..
    • Milk
    • Fresh squeezed lemon juice
    • or Distilled White Vinegar
    Step1
    Place 1 tablespoon freshly squeezed Lemon juice or distilled white vinegar in a measuring cup.
    Step2
    Add in milk to equal 1 cup. Stir.
    Step3
    Let stand for 15 minutes until it looks like its beginning to curdle or slightly curdled.

      I want to try baking some soda bread after watching 'The Hungry Sailors'
      on ITV yesterday.
      It looked very easy but I couldn't remember the ingredients.

      So looked up the recipe you had posted Marley - didn't realise it was
      September 2008 but here it is! Brilliant!

        Not doing anything special Ziggy,except looking after OH which takes a lot of my time.

        I do manage to look around GC quite often.

        BTW - are you down-under ?:heehee:

        Caring is a major thing, can sympathise there.

        Hanging upside down to amuse the members in times of lack of gardening, should have done it to raise money for GC in retrospect:DOH:

        you can use buttermilk instead of sour milk

        :thumbsup: Yes should do jjordie.. I have used cider vinegar a few times & that was fine.. Enjoy it is a nice little bread when done.. :thumbsup: Great to see you again, best wishes to Jack too.. :thumbsup:

        Nice to see an authentic recipe for Soda bread. My mother's generation were all expert at making soda bread - out of necessity - as there were no supermarkets - and the nearest shop was often several miles walking distance - if you were a rural dweller.

        My mother and my aunts were all total fundamentalists when it came to making soda bread and I can recall them almost throwing things at the tv when some cookery programme suggested the addition of orange zest or sultanas to the standard ingredients of flour, salt, bread soda and sour milk. I remember how wonderful their bread tasted so they were probably correct about it not needing any extra embellishments.

          My first attempt at soda bread.
          Looks a bit rustic and was a bit solid but was lovely eaten with butter and cheese
          when still warm. Second piece with butter and apricot jam was good too! :D​

            Had a second try at soda bread today and it was good but still
            a bit solid. Is it meant to be like that or am I doing something wrong?
