Jam help

    Do any of you have any good recipes for making jam? I have made plum jam and blackberry jam in the past but not made any for about 3/4 years now. Any recipes you have tried and tested yourselves would be great, especially ones including apple as we have an apple tree, but other fruit too.

    Ok GTTkel
    Heres one we like and are producing as the crop comes in from our one apple tree.

    You need:
    Bags of frozen fruit of you choice. I like mixed berries.
    Apples from your tree
    Granulated white sugar
    lemon juice.
    Quantities i use for my jam machine are
    25% frozen berry Fruit
    75% apples
    For me thats 250gram berry fruit and 750gram of apple, thats makes 1Kg
    Peel, chop apples
    add fruit and apples to your pan with a good dash of lemon juice.
    Cook it all down a bit until nice and soft, and then add 1Kg of sugar.
    Go to a rolling boil until setting point is reached.
    I use a small plate in the freezer to make it cold.
    A little jam on the plate now and agian will tell you when it is ready.
    If you push the little dollop with your finger end and it wrinkles the jam is ready.
    If you have a load of scum on top try a little butter on the surface of the jam to remove it.

    Take your clean warmed jars from the oven and fill to the top. Put your wax disc on top and seal with a screw cap.
    The above will make about 4 jars. usually three large and one small.

    thanks that has given me something to cook up this weekend and the kids will love knowing it's from our own tree
