Kale Recipes, please.

    My kindly neighbour has delivered a box of kale (green and purple). It needs to be used up quickly.

    I have searched the forum and discovered a risotto recipe (but that doesn't tempt me at the moment) and a Caldo Verde (ditto).

    Any other suggestions?

      I would just cut it up, clean the stems off and throw it in soups or stews. If really a lot, just cut it up clean the stems off and put in into a couple of freezer bags for later to throw it into soups or stews, should keep for several months. It pretty much softens out in soups or stews but gives up the minerals and vitamins you want it for. With a good soup or stew with other hardy flavors present the Kale flavor kind of takes a major back stage. I 've used it in tomato pasta sauce with sauages too.

        It's not the easiest veg to use well but I'd go for a soupy/brothy recipe, like I guess caldo verde is. What about ribollita? Or is that pretty much the same.

        Continuing the medieval peasant theme (there's nothing sophisticated about cabbage) what about a bacon/cabbage combo? Kale would make an excellent substitute for cabbage.

        BACON with Cabbage & Potato
        Ingredients:
        Bacon
        Cooked Cabbage
        Cooked potatoes sliced
        Mustard seeds
        Fry bacon until fat runs, add potatoes and brown. Add cabbage and heat through until piping hot. Add mustard seeds and cook until they pop. Serve straight from the pan.
