Last Minute Christmas Cake

    1lb/450g Mincemeat
    8oz/225g Wholewheat Flour
    3 level tspns. Baking Powder
    5oz /150g Dark Brown Sugar
    5oz /150g Softened Butter or Soft Marg.
    6oz/175g Mixed Dried Fruit
    2oz/50g Walnuts chopped
    Grated Zest of 1 Small Orange
    Grated Zest of 1 Small Lemon
    3 Large Eggs

    7inch Square Tin or 8inch Round Tin

    Preheat Oven To 325 F /170 C

    Grease & line tin,Place all ingredients in a large mixing bowl (no need to beat eggs) & beat with an eletric whisk.
    Spoon the mixture evenly into tin,level off the surface.
    Bake for about 1hr 30mins or until the centre springs back when lightly touched.Allow to cool in the tin for 30mins before turning out.

    sounds lovely gogs will take a copy of the recipe, mind going to be lazy may not make a xmas cake seen a lovely one in marks & spencers and also seen one similar in tescos.

    I've always shyed away from making chrissy cakes. But will copy your recipe down and do next year.....It looks a far simpler recipe than the ones i usually find. you know the sort, need a concrete mixer and an oven on for hours and hours. Hubby is diabetic, i could consume a 7" cake over a couple of weeks. Then diet for the next 30.

    Just made a family Chritmas cake recipe that has been passed on to me.

    6oz marg
    6oz castor sugar
    4 eggs
    8oz Raisons
    1lb sultanas
    4oz currants#6-8oz glace cherries

    9oz plain Flour
    1teaspoon Baking powder 1teasp of gravy browning to help make it a darker cake.I left this out.

    Beat Marg &Sugar till cramy .Then add eggs one at a tiem,beatign all the timeand adding a little flour with last egg id signs of curdling.

    Next stir in dry ingre dtill mixture is blended well.
    Put in cake tin and bake in slow ofen for 2and half to 3hrs
    Gas Reg 3 for 1hr then turn down fan oven 160deg.

    I whould like to ice it so it looks like rouch snow peaks.

    Has anyone got an easy good icing recipe?

    I dont like marizpan.

    Can you ice a cake without marzipan?
    is it to late for making cake and too early to ice.
