Leek potatoe &sweet tattie soup

    2leeks sliced

    4 potatoes chopped

    1 lge sweet pototoe

    lg onion chopped


    Above cook till soft in olive oil then add stock
    2-3pts veg stock

    Before serving add fresh parsely my own recipe.

    Enjoy and serve with crusty bread.

    Mmmm sounds really scrummy but healthy too!

    Would be so tempted to add cream just at the last... must resist....MUST RESIST.... MUST RESIST !

    I made this for lunch, delicouse and the first time Ive really cooked with sweet potatoe aside from curry. Only modification was to halve the onion and use 4 leeks.
