Lesson learned, banoffee pie

    I've just learned that the key to making the filling for a banoffe pie is never stop stiring or answer the phone:hehe: I would post a picture of the bottom of the pan but I cant find the batteries for my camera again:dh:

    but black would be an understatement there was like an inch of black rock on the bottom

    Well after popping down the road for another can of condensed milk and an odd look from the checkout girl (I'm sure she thinks I drink the stuff =]) I've managed to get it right although I dont know how the instructions came up with "caramel coloured" as mine was more of a goldeny white with burnt bits in it

    The best way to do the filling is to put a tin of condensed milk in a pan and boil it for 3 hours. I do 3-4 tins together then put them back in the cupboard as they're still sealed so last a long time. When u wanna use them open a tin and scoop out the filling.

    That sounds like a very good idea! so do you just mix the cooked tin of condensed milk in with the sugar and butter to make the filling?

    Hmm! Just for the people who are doing this for the first time. Don't boil the tins of condensed milk for 3 hrs., simmer them for 3 hrs.. I've never used butter and sugar, the soft toffee is sweet enough. Make sure you use a biscuit base and not a pastry base. A pastry base goes as hard as rock. To make the base make sure you use butter and not Marg. or the base is too soft.

    So you all just use a can of condensed milk?

    Can I have a couple of recipes? as my current one appears to be naff:lollol:

    You could always buy the ready made caramel that comes in tins:gnthb:

    The ready made stuff isn't as nice. Here's my recipe

    8oz digestive biscuits ( sometimes I use ginger biscuits or shortbread)
    1 can condensed milk (which has been previously boiled in a pan for 3hours and allowed to cool)
    2/3 bananas
    4oz Marg
    1/2 pint double cream
    1 tsp cocoa

    Make biscuit base by melting the marg and mixing in the crushed biscuits and leave it to set.
    Spread condensed milk over the base.
    Layer with sliced bananas.
    Whip the cream till fairly thick and spread over the bananas.
    Sprinkle with cocoa.


    I normally make mine in a glass flan dish as it's easier to transport, cut and is easier to handle.
