Mushrooms

    Other than "eat them quickly" ... how do you "keep" mushrooms once you've bought them?

    Here you can only buy packs of mushrooms about 300g. T'other half loves them fried but I only will have them in sauces. Having to buy so much is a problem ... I'm doing them in two minutes for t'other half to go with our pasta meal.

    So .. how do I keep what's left over fresh or can I freeze them?

    Yes, you can freeze them. You can also dry them, easy I would think in your climate and excellent for sauces!

    Dried is good, will keep for a long time. I have read somewhere that if you are going to freeze them it is best to saute them in oil for 30 seconds. This could also be a complete myth so don't take my word for it. :D

    Hadn't thought about the drying. I did that with my tomatoes last year but I then put them in olive oil! Do I just seal the dried ones in a container or put them in olive oil as well?

    They do sound rather yummy in olive oil, you could do a bit of both to see which lasts the best. [​IMG]

    We pickle wild chanterelle mushrooms.
